    TOFU WITH GINGER MARINADE

    Number of Servings: 2 - 4

    INGREDIENTS

    • 16 ounces tofu, cut into 8 slices
    • 2 tablespoons soybean oil

    MARINADE:

    • 1 clove garlic
    • 3/4 inch fresh ginger root
    • 1 tablespoon cilantro leaves
    • 2 tablespoons water or Sake
    • 2 tablespoons soy sauce
    • 2 tablespoons honey
    • 1 tablespoon lemon juice

    INSTRUCTIONS

    • Press tofu to remove any excess water.
    • Cut each slice of tofu into 2 triangles.
    • Finely chop the ginger root, the garlic and the cilantro.
    • Mix with the remaining marinade ingredients.
    • Place the tofu in this sauce for 1 hour.
    • Drain the tofu and set aside the marinade.
    • Sauté the tofu in the soybean oil until lightly browned.
    • Remove and set aside.
    • Deglaze the pan with the marinade. Reduce to the
    • desired consistency and pour over the tofu slices.
    • Serve and enjoy!

    TOFU TACO

    INGREDIENTS:

    • 1/2 LB firm tofu, drained well & cut to 1-inch cubes
    • 1/3 cup vegetable oil
    • 1 LB potatoes, boiled & cut in 1-inch cubes
    • 1 onion, sliced
    • 2-3 Anaheim chilies, seeded & sliced into strips
    • 2 cups tomato, chopped
    • 1 tsp cumin
    • 1/2 tsp coriander
    • 1 tsp chili powder
    • 1/4 tsp crushed red chilies
    • 2 tsp salt
    • 1/2 tsp pepper

    DIRECTIONS:

    Put oil in a large skillet covering the bottom of the skillet well & heat over medium-high heat. Brown tofu cubes well on each side. Remove tofu from pan & drain on paper towels. Using the remaining oil sauté onion & chili until lightly browned. Add potatoes, cumin, coriander, chili powder & crushed chilies stirring well to combine. Add tomatoes, salt & pepper & cook on low stirring to mix flavors & let tomatoes release juice & soften somewhat. Serve in bowls of tofu & tomato-potato mixture with warm corn tortillas, shredded lettuce or cabbage & guacamole or salsa.

    SERVING TIPS: Great with pinto beans and fresh fruit salad

    CHINESE TOFU SALAD

    TOOLS YOU WILL NEED:

    Pan to boil tofu, eggs & spinach, large bowl, knife for cutting, small bowl for dressing, small whisk to mix dressing, garlic masher.

    INGREDIENTS:

    • 2 Pkg (28 oz ea) Tofu, drained, parboiled & cut into small blocks
    • 2 hard boiled eggs
    • 1 large tomato
    • 1 bunch spinach, parboiled & chopped into bite size pieces
    • 3 green onions, chopped

    CHINESE DRESSING:

    • 3 Tbsp soy sauce
    • 1 Tbsp rice vinegar
    • 2 Tbsp sesame oil
    • 2 tsp oyster sauce, optional
    • 2 cloves garlic, crushed
    • Chinese chili bean paste to taste

    DIRECTIONS:

    Combine dressing ingredients mixing well. Cut eggs & tomatoes in 6-8 wedges. Put tofu, spinach, eggs & tomato in a large salad bowl, sprinkle green onions on top. Pour dressing over the salad & sprinkle with chow mein noodles.

    TIME: 20 minutes

    Tofu banana pudding - DESERT

    • 1 pack tofu
    • 2 very ripe small bananas
    • 3/4 cup of soy milk
    • 1/4 sugar
    • 1 tsp of carob powder

    Put all ingredients in food processor and pulse until creamy. Spoon into 4 serving dishes and refigerate for 2 hours. Serve cold.

    Tofu Bul-Go-Gi

    Ingredients:

    • 1 block medium tofu, drained
    • 10 T soy sauce
    • 3 T sesame oil
    • 3 T sugar
    • 2 green onions, diced
    • 2 cloves garlic, crushed
    • 2 T crushed, toasted sesame seeds
    • 2 T hot red been paste (or to taste)
    • Broccoli tips
    • Steamed Rice

    Directions:

    First toast the sesame seeds in a wok, stirring them so they don't burn. When they're brown they're ready. Crush the seeds in a food processor or blender. Now put them back in the wok. Add the soy, sesame oil, sugar, green onions, bean paste, and garlic to the wok and mix them. This is basically the marinade used in more traditional Korean Bul-Go-Gi (BBQ beef or pork).
    Heat the marinade. Cut the tofu in 1/2 cubes. Add the broccoli to the marinade for about 1 minute. Then add the tofu before serving it over the rice. The longer the tofu sits in the marinade the more flavor it picks up. I prefer it lightly flavored since the marinade is strong. Spoon extra sauce over rice as desired.

    Serves: 3-4

    Tofu Carrot Salad

    Ingredients:

    • 4 cups shredded carrot
    • 1/4 cups raisins
    • 6 oz canned crushed pinapple, drained
    • 8 oz Soft 1% fat Tofu
    • 3 Tablespoons fresh lemon juice

    Directions:

    • Blend Tofu with lemon juice in blender until creamy.
    • Mix together in large bowl, shredded carrot, raisins and pinapple.
    • Add Tofu/lemon juice mixture and mix together.
    • Let chill in refrigorator for 15-30 minutes before serving.

    Serves: 8

    Preparation time: 10 minute

    Tofu Delight - DESERT

    Ingredients:

    • 1 package soft tofu
    • 1-2 bananas
    • 2-3 tbsp orange or pineapple juice concentrate
    • 1 tbsp vanilla
    • 1 bag frozen strawberries

    Directions:

    • Blend until smooth. Serve in sherbet glasses.
    • This recipe has a real tangy zip to it.
    • Preparation time: 10 minutes.

    Tofu Stir Fry

    Ingredients:

    • 3 heads of broccoli
    • 1/2 container of tofu
    • 5 portabello mushrooms
    • garlic and
    • Soy sauce
    • 1 Tbsp vegetable oil

    Directions:

    Cut up broccoli, tofu, and mushroom, and garlic and ginger. Heat pan with vegetable oil. Add broccoli and cook five minutes or until a dark green. Add mushrooms and garlic and ginger. Cook 3 minutes, then add tofu and soy sauce. Cook until mushrooms are tender. Serve hot.

    Serves: 4

    Preparation time: 30 minutes

    Tofu Makhani

    Preparation Time : 15 min.

    Cooking Time : 25 min.

    Serving : 4 People

    Ingredients

    • 1 8 oz pake of firm tofu
    • 2 T.spoon fresh curd
    • 3 big tomatoes
    • 3 onion thinly sliced
    • 1 T. Spoon Garam masala
    • 2 T. Spoon crushed coriander & cumin Powder
    • 1 1/2 T Spoon Red Chili powder
    • 1/4 T Spoon Haldi Powder
    • 1/4 cup fresh Cream
    • 2 T Spoon Butter
    • 4 T Spoon Ghee
    • Salt (OR you can add masala as per your taste)

    For Frying : Ghee

    Fresh Thinly cut coriander leaves

    Procedure :

    1. Cut Tofu in finger length size and fry it in Ghee until it is little brown.
    2. Spread curd on fry Tofu.
    3. Put Tomatoes in warm water for 5 minutes & then cut it roughly.
    4. Heat the pan and put Ghee in it. Put onions and saute till it become transparent.
    5. Add Garam Masala, Coriander & Cumin Powder, Red Chili Powder, Haldi & Salt , Saute for one minute.
    6. Add Tomatoes and saute for 5 minutes or until Ghee leaves the sides of pan.
    7. Add one cup of water and cream. Leave it on slow fire for some time and then add butter .
    8. Add Tofu in it and leave it for 2 minutes.
    9. Remove from the fire and decorate with fresh coriander leaves.

    Tofu Seekh Kababs

    Ingredients

    • 1 lb pack of Tofu Ground (the regular grocery store variety)
    • 10 Serano Peppers (or 5 hot green chillies)
    • 1 large Onion another for garnish
    • 3-4 cloves Garlic (medium sized)
    • Ginger
    • All purpose flour
    • Salt to taste
    • Garam Masala powder
    • 2 Tsp Oil
    • 1 bay leaf
    • 1 red chilli for tempering
    • 1/4 cup of water
    • Coriander leaves for recipe and garnish

    Method:

    1. Grind Onion,Garlic,Ginger and Coriander leaves to fine paste.
    2. heat oil add red chilli to the oil ,add a bay leaf,add paste immediately add salt and garam masala powder.
    3. Saute for 2-3 mins till oil and paste are separated from the edge of the pan
    4. Mix flour and water to a pouring consistency
    5. Add above paste to tofu mixture in pan
    6. Leave it on medium heat for about 3-4 mins.( The mixture should not be dry totally)
    7. Put the mixture on Skewers (wrap around each skewer)
    8. Grill over Charcoal /in the oven and YUM!!!!......
    9. Serve with lemon and onion slices.

    Green Tofu Soup

    Ingredients

    • Kale or Spinach - 1 cup
    • Pinto Beans (soaked or canned) -- 1/2cup (if pinto beans is not available use rajma or white channa)
    • Onion - 1 cup (cut into pieces)
    • Tofu - 1 packet (extra firm)
    • Garlic - 1 clove
    • Ginger - 1 tsp.
    • Green Chilli or Jalepeno - 2
    • Oil & Cumin seeds for seasoning.
    • Salt to taste

    Method:

    1. Cut extra tofu into medium cubical piece.
    2. Heat oil in a pan & season cumin seeds. Add onion, garlic & ginger & saute for a while. When onion becomes transparent add kale, chilly & pinto beans to it & saute for a while. Let it cool for a while.
    3. Grind them till it becomes a semi smooth paste. Pour the paste into the pan & add water to it.
    4. Now add the tofu pieces & allows it to boil. Removes it from the heat when the soup starts to thicken.
    5. Serve hot.

    Tofu With Capsicum Veg

    Ingredients

    • 2 small or big 1 Capsicum
    • 1 big Onion
    • Tofu (firm tofu) or cake tofu
    • 1 tsp Vinegar (white)
    • 1-2 tbsp Soya Sauce
    • Garlic paste
    • Ginger paste
    • Black Pepper powder

    Method:

    1. First cut the onion and capsicum in length wise.
    2. Take oil in the pan, fry the onion and capsicum together till it turns little red in colour.
    3. Add garlic and ginger paste, after 5 minutes add soya sauce, vinegar and black pepper powder.
    4. At the end, add the tofu's pieces in the veg.

    Note:

    You can put the tofu's pieces in the soya sauce just for colouring. (3-4 hours)

    Tofu Treat

    Ingredients

    • Extra Firm Tofu - 1 pack
    • Gram Flour (Besan) - 150 gms
    • Garlic - 3 cloves
    • Chilli Powder - To taste
    • ChatMasala - To taste
    • Oil - For Frying

    Method:

    1. Cut extra firm tofu into squares.
    2. Crush garlic and mix with tofu then add salt and chilly powder. Let it marinate for half an hour.
    3. Make batter of gram flour(besan) with water and add salt and chilly powder(like batter for pakora). Dip tofu pieces in it deep fry in oil. Sprinkle some chat masala on it.
    4. Serve hot with Green Chutney or Tomato Ketchup.

    Paalak-Tofu Curry

    Ingredients

    • Spinach 1 lbs
    • Tofu 1 pocket
    • Onion 1 medium size
    • Tomato 1 medium size
    • Red Chilli powder to taste
    • Turmeric 1 pinch
    • Salt to taste
    • Cumin seeds 1 pinch
    • Garlic 2 flakes(optional)
    • Ginger 1 small piece (optional)
    • Oil 2 tbsp

    Method:

    • Wash the Spinach thoroughly and add garlic and ginger then let it boil for 5-8 mts or until its soft.
    • Cool it and then grind to a fine paste alongwith the tomato.
    • Heat oil in a pan and add cumin seeds, when its done, quickly add lengthwise chopped onions , fry them until it turns golden brown.
    • Add little turmeric powder , chilli powder and salt and then add the spinach-tomato paste. add little water to give it a curry consistency. Let it cook for sometime.
    • cut Tofu into small square pieces and finally add to the above prepared curry. let it simmer for a while and enjoy the taste.....u can decorate it with coriander or mint leaves if u wish.....

    Tofu With Red Capsicum

    Ingredients

    • 1 red Capsicum
    • 1 cake Tofu
    • Green Chillies
    • Fresh Coriander
    • 1 tsp Jeera
    • 1 tsp Turmeric
    • 1tsp dry Coriander
    • 1tsp Gram Masala
    • 1 Tomato
    • 1 clove Garlic
    • Ginger
    • 1tsp Salt
    • 1 Onion
    • 1 tbsp Oil

    Method:

    1. Cut the tofu and capsicum into big square pieces.
    2. Chop tomatoes, green chillies, garlic and ginger, now take a pan with 1 tbsp oil put jeera, garlic and ginger with chopped onion saute it till brown now add tomato saute it little while and add all the spices cook it for few minutes.
    3. After 2 minutes add tofu with capiscum. Cook it for 5 to 8 minutes.
    4. Serve hot with chapattis or rice.

    Note:

    You can make it without onion also.

    Tofu & Peas Curry

    Ingredients

    • Ginger & Garlic paste - 1tbs
    • Onions -3
    • Tomatoes - 2
    • Tofu - 1 packet
    • Peas - 1 cup
    • Turmeric powder -1tsp
    • Chilly powder - 1tbs
    • Coriander powder - 1tbs
    • Cumin powder - 1tbs
    • Garam masala powder - 1tsp
    • Coriander leaves (chopped) for garnishing.
    • Oil for sauteing
    • Salt to taste.

    Method:

    1. Cut onions & tomatoes. Saute onions till they become transparent & grind them with tomatoes to a smooth paste form.
    2. In a heavy bottomed kadai, saute peas with little oil till it gets a bright green colour & keep them seperate.
    3. In the kadai, saute onion & tomato paste in oil till the paste gets a golden brown colour
    4. Add the garlic & ginger paste to it &saute them till the smell of the onion comes out of it fully.
    5. Now add Chilly powder,turmeric powder,coriander powder, garam masala powder & cumin powder &stir them for 5 minutes.
    6. Add water to the mixture & let it to a boil. Once it has started to boil add peas, tofu & salt. Now the simmer the heat & let it to boil till the curry thickens.
    7. Garnish them with chopped coriander leaves. Happy Cooking!

    Avial with Tofu

    Ingredients

    • 2 cups of vegetable (hard veggies like green Plantain, Chayote Squash, Drumstick are preferred. Potato, Carrots can be used) - cut into long pieces
    • Tofu - 1/2 cup
    • Yogurt - 1/2 cup
    • Jeera - 1/4 tsp
    • Green Chilli - 1
    • Salt to taste
    • Pinch of Turmeric
    • 2 sprigs of Kari pattha

    Method:

    1. Boil the vegetables in water with salt and turmeric.
    2. Grind tofu, yogurt, green chilli and jeera and add it to the boiled vegetables. Heat it for just 5 minutes.
    3. Garnish with karipattha.
    4. Very tasty, very healthful Avial is ready!

    Spicy Tofu

    Ingredients

    • 1 cup firm Tofu grated or tofu crumbles.
    • 1 cup chopped Onions
    • 1 cup chopped Red Cabbage, Peas , Cauliflower or Carrots
    • 2 Tbsp of Oil
    • 1/2tsp of Fennel Seeds
    • 1 -2 tsp Curry Powder or any Curry Paste or Garam Masala Powder or Hot Pepper Powder
    • 2 tsp of Tomato Paste
    • 1 cup chopped Tomatoes
    • 1/2 cup chopped Cilantro (coriander leaves)
    • 2 tsp of Sour Cream
    • 1/2 cup of Water

    Method:

    1. Heat 2 Tbsp of oil in a pan.
    2. Add 1/2 tsp of fennel seeds.
    3. Add onions, saute until limp. Add cabbage and tomatoes, stir.
    4. Add tofu and mix well. Add salt, curry powder or any curry paste or garam masala powder as per your desired level of spiciness.
    5. Add tomato paste. Mix. Cover and cook till done to your desired tenderness.
    6. Add cilantro at the end.
    7. One can eat this with cooked white Rice, Naan, Chappathi or as sandwitch.

    Cook's Note:

    1. This can be made dry as stir-fry or if you like it saucy, then add 2 tsp of sour cream and 1/2 cup of water and cook.
    2. Choose any vegetable like peas, cauliflower or carrots alone or in any combination.
    3. Along with fennel seeds, cinnamon sticks and a few whole cloves can also be added for additional flavour

    Tofu Masala

    Ingredients

    • Tofu (FirmType) - 1
    • Green Pepper/Capsicum - 1
    • Onion - 1
    • Tomato - 1
    • Garam Masala - As desired to your taste buds
    • Salt to taste
    • For seasoning:-
    • Oil
    • Cumin seeds
    • Fennel seeds
    • Mustard
    • Clove & Cardamom

    Method:

    1. Drain off the water collected in the Tofu packet & show Tofu under running water for a second.
    2. Slice the Tofu, Green pepper, Onion & tomato lengthwise.
    3. Season the ingredients mentioned above in "for seasoning". When Mustard splutters add onion. Saute onion till it becomes slightly brown.
    4. Then add tomato, green pepper, garam masala. Stir them for few seconds till you get the brown colour. Add Tofu & salt.Cook it with a half a cup of water & cover it with a lid till the water evaporates fully. Stir it for few seconds & remove it from the heat.
